The Traditional Journey of Our Jaggery
Sugarcane Cutting & Cleaning (गन्ने की कटाई और सफाई)
Fresh, mature sugarcane is harvested from fields.
It is washed to remove mud and dust.
Juice Extraction in Kholu (कोल्हू में रस निकालना)
Sugarcane is crushed using a traditional kholu – iron crusher operated by diesel engine, or electric motor.The extracted juice is collected in large containers.
Juice Filtering (रस की छानाई)
The raw juice contains dust, particles, and cane fiber. It is filtered using cloth or mesh before boiling.
Boiling on 'Khaand / Kholu Chulha' (खांड या खोलू के बड़े कड़ाह में उबालना)
The filtered juice is poured into a big iron pan (kadhai) fixed on a chulha (fire furnace) made with mud and bricks.Fuel used: sugarcane leaves, Juice is continuously boiled for 2–3 hours.
Removing Foam & Impurities (फेन और गंदगी हटाना)
While boiling, a lot of foam (झाग) and impurities (गुड़ की मैल) rise on top. Workers use a ladle or jhara to remove the dirt, making the juice clear and golden.
Natural Clarifiers (प्राकृतिक सफ़ाई सामग्री)
To purify the juice naturally:Sukhlai, (food-grade lime) is added. This helps impurities collect on top for easy removal — no chemicals or sulphur.
Juice turns thicker, darker, and sticky.When it reaches soft ball stage (2 drops in water turn solid) — it's ready to become jaggery.
Cooling & Moulding (ठंडा करना और ढालना)
It is cooled and shaped into blocks, balls, or powder using wooden paddles.
Final Packing (पैकिंग)
Once cooled, jaggery is packed in cloth, jute, paper, or food-grade polypack bags. No chemicals, no preservatives — just pure traditional gud.
